Methemoglobinemia occurs when nitrates convert to nitrites in infants, reducing oxygen in blood. Baby's skin turns blue. It's a medical emergency.
Infants under 6 months have different stomach chemistry that allows bacteria to convert nitrate to dangerous nitrite. Adults' stomach acid prevents this.
